Oh, my! I love this French Onion Chicken so much! A big thanks to my friend for sharing this recipe with me. Oh, man, you have got to try this recipe if you want to taste perfection. Enjoy!
Ingredients:
1 lb. chicken breasts or thighs (optionally boneless and skinless)
1 tsp thyme, chopped
1 tbsp olive oil
2 lbs. onions, sliced
1 cup gruyere, grated
2 c beef broth or chicken broth
2 cloves garlic, chopped
2 tbsp Dijon mustard
2 tbsp flour
1 tbsp balsamic vinegar
3 tbsp butter
salt and pepper to taste
Directions:
Place a pan on the stove and turn the heat to medium.
Add butter and allow it to melt.
Add the onions, then sauté until soft and a bit caramelized.
Add the thyme and garlic, then sauté until aromatic.
Add the flour, then whisk and cook for about a minute to remove the raw taste.
Add ½ of the broth, then scrape the bottom of the pan to get the browned bits. Allow the mixture to boil.
Turn the heat down to low, then simmer for 5 minutes.
Place another pan on the stove and turn the heat to medium-high.
Add oil and allow it to become hot.
Sprinkle salt and pepper all over the chicken, then rub until well coated.
Add the chicken into the pan and sear each side for a few minutes until they turn brown.
Add the rest of the broth, then stir until well blended.
Add the mustard and balsamic vinegar, then stir again until well blended. Allow the mixture to simmer for a few minutes until it reduces its volume.
Scatter the onions into a heat-proof pan, then arrange the chicken on top.
Pour the broth over the chicken, then covers the pan with foil.
Place it inside the preheated oven and bake for about 20 minutes or until done.
Remove the cover, then sprinkle a generous amount of cheese on top. Broil for a few more minutes until the cheese turns golden brown.
Remove from the oven and let it rest for a few minutes at room temperature.
Serve warm and enjoy!
