Ingredients:
diced tomatoes
green onions
15 oz. ricotta cheese
1 lb. lean ground beef
sour cream
5 c shredded Mexican-style cheese
24 oz. mild Pace salsa
1 Egg
1 package of lasagna noodles
2 packages of taco seasoning
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Put a skillet on the stove and turn the heat to medium-high.
Add the ground beef into the hot skillet, then cook for a few minutes until crumbly and brown. Discard any accumulated grease.
Sprinkle the taco seasoning on top of the ground beef, then stir until well coated. Remove the skillet from the heat.
Add ricotta cheese and eggs into a mixing bowl. Whisk until well combined.
Lay the lasagna noodles into a baking dish.
Add ricotta mixture, beef, ⅓ of salsa over the noodles, and cheese. Repeat the process until everything is arranged in layers ending with cheese. Cover it with foil.
Place the baking dish inside the preheated oven and bake the Taco Lasagna for about 40 minutes or until done.
Remove the taco lasagna from the oven and let it cool for a few minutes at room temperature.
Top each serving with slices of tomato, green onions, and a dollop of sour cream.
Serve warm and enjoy!
