I can’t count how many times I cooked this Rustic Roasted Garlic Chicken with Asiago Gravy! You can say that it is my favorite food ever! I like serving it with rice or mashed potatoes! This recipe is very easy to make. You can also use a slow cooker for this one. Enjoy!
Ingredients:
2 tsp fresh thyme, chopped (or 1 tsp dry thyme)
1 onion, diced
20 cloves garlic, peeled
1 ½ lbs. bone-in and skin-on chicken thighs (4-6 thighs)
1 tbsp oil
1 c chicken broth
½ c Asiago cheese (or Parmesan), grated
2 tbsp flour
salt and pepper to taste
Directions:
Place a large skillet on the stove and turn the heat to medium-high. Add oil and allow it to become hot.
Sprinkle salt and pepper over the chicken, then rub each until well coated.
Add the chicken into the hot skillet, then cook for 5 minutes on each side or until they turn golden brown. Move the chicken onto a clean plate.
In the empty skillet, add garlic and onion. Sauté for a few minutes until soft and aromatic.
Add flour and thyme, then whisk and cook for about a minute to remove the raw taste of the flour.
Add the broth, then scrape the bottom of the skillet to get the browned bits. Stir everything until well incorporated. Season with salt, pepper, and Asiago.
Put the chicken back into the skillet, then toss until well coated with the sauce.
Reduce the heat to medium-low, then cover the skillet and cook the chicken for about 15 minutes.
Serve hot and enjoy!
Slow Cooker Method:
Repeat steps 1 to 8, then transfer everything into a slow cooker. Cook for 2 to 4 hours on high pressure or 4 to 10 hours on low pressure.
