Ingredients:
1 teaspoon chili powder
Kosher salt
1 teaspoon ground cumin
6 medium flour tortillas
1 large onion, chopped
1 pound of ground beef
1 tablespoon extra-virgin olive oil
Cooking spray
2 cloves garlic, minced
1 cup shredded Monterey jack
Freshly ground black pepper
2 tomatoes, chopped
2 tablespoons tomato paste
1 cup shredded cheddar
TOPPING:
Fresh cilantro
Pico de Gallo
Sour cream
Directions:
Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Apply cooking spray to an 8 or 9-inch springform pan.
Place a large skillet on the stove and turn the heat to medium.
Add oil and allow it to become hot.
Add the onion into the hot skillet, then sauté for 5 minutes or until translucent.
Add garlic and spices, then sauté for about a minute or until aromatic.
Add the ground beef, then cook for about 6 minutes or until crumbly and brown. Remove any excess grease.
Add the tomato paste and tomatoes. Stir and cook for about 2 minutes. Sprinkle salt and pepper to taste.
Lay a tortilla to the bottom of the prepared pan, then spoon a bit of the beef mixture and cheese on top. Repeat the process with the rest of the ingredients until everything is arranged in layers.
Place the springform pan inside the preheated oven and bake the Quesadilla cake for about 20 minutes or until the cheese has melted completely.
Remove the Quesadilla cake from the oven and allow it to rest for a few minutes at room temperature.
Sprinkle your preferred toppings over to garnish.
