I made this mushroom Ravioli with spinach again today and as expected, it was a blast! This dish is super easy to make using just six simple ingredients. A quick dinner option that you can make in less than thirty minutes.
The mushrooms are sauteed with spinach, garlic, and sun-dried tomatoes. Then, mixed with ravioli. For this recipe, you can use baby portobellos, shiitake, oyster mushrooms, cremini, or button mushrooms. If you love ravioli, I am sure that you’ll dig this Mushroom Ravioli with Spinach!
I love Italian-filled pasta mixed with a flavorful combination of veggies and mushrooms. This easy recipe is another one of my favorites. An Italian ravioli-inspired dish that you can easily and quickly make at home at any time. For this recipe, I used store-bought ravioli stuffed with 4 cheese mixes. If desired, you can make homemade ravioli.
Ingredients
¼ c. sun-dried tomatoes, chopped
10 ounces ravioli (cheese ravioli, pesto-filled, etc.)
2 tbsp olive oil
10 ounces mushrooms (cremini, button mushrooms, or baby portobellos)
4 cloves garlic, minced
¼ tsp red pepper flakes
5 ounces spinach, fresh
salt and pepper
1 tbsp olive oil
How to make Mushroom Ravioli with Spinach
Step 1: Start by cooking the ravioli until al dente. Drain when done.
Step 2: Heat 2 tbsp olive oil in a large skillet over medium heat. Once hot, add the chopped sun-dried tomatoes along with the sliced mushrooms. Cook for about 2 minutes, stirring.
Step 3: Then, add the fresh spinach, followed by the minced garlic and red pepper flakes. Cook further while stirring until the spinach has wilted.
Step 4: Add the cooked ravioli and 1 tbsp olive oil into the skillet with the sauteed mushrooms and veggies. Stir well and gently reheat over medium-low heat.
Step 5: To taste, season with salt and pepper.
