Ingredients:
For cooking the chicken:
2 tbsp olive oil
1 tsp garlic powder
2 tsp Italian seasoning
½ c flour
4 thin boneless, skinless chicken breasts (or 2 thick ones, halved horizontally and paper towel dried)
1 tsp salt
¼ tsp black pepper
Pasta:
12 ounces of spaghetti
White Wine, Parmesan Sauce:
1 c heavy cream
1 c white wine
½ c Parmesan cheese, shredded
2 scallions, chopped
½ tsp salt more to taste
4 tbsp butter
¼ tsp crushed red pepper flakes
1 tbsp flour
1 tsp Italian Seasoning
2 small tomatoes, diced
1 small yellow onion (or use ½ onion) chopped
4 garlic cloves, minced
Directions:
For the Chicken Breasts:
Use paper towels to pat dry the chicken breasts, then horizontally slice them into pieces.
Add garlic powder, Italian seasoning, flour, black pepper, and salt into a mixing bowl. Whisk until well incorporated.
Put the chicken pieces into the bowl with the flour mixture, then toss until well coated.
To Cook the Chicken Breasts:
Place a large skillet on the stove and turn the heat to medium-high.
Add 2 tbsp of olive oil and allow it to become hot.
Add the chicken pieces into the hot skillet, then cook each side for about 5 minutes or until they turn golden brown. Remove the chicken from the skillet and move them onto a clean plate.
For the Sauce:
In the empty skillet, add butter and allow it to melt.
Add minced garlic and yellow onion into the hot skillet, then sauté for a few minutes until aromatic and soft.
Add the tomatoes and chopped scallions, then sauté for a minute until soft as well.
Add 1 tbsp flour, then whisk and cook for one minute.
Add the red pepper flakes, wine, heavy cream, salt, and Italian seasoning. Stir until well blended, then let the mixture simmer.
Add ½ cup Parmesan cheese, then stir until melted completely.
For the Pasta:
Refer to the directions provided on the package of the pasta on how to cook it until al dente. Drain.
To Assemble:
Add the drained pasta into the skillet with the sauce, then toss until well coated.
Reduce the heat to low, then simmer for 2 minutes.
Put the chicken back into the skillet over the pasta.
Sprinkle more Parmesan cheese on top of the chicken. Cook for 5 more minutes, then remove from the heat.
