Directions:
2 tablespoons finely chopped fresh parsley
1 tablespoon olive oil
1 ½ teaspoons Italian seasoning
3 tablespoons unsalted butter, divided
2 tablespoons all-purpose flour
Salt and freshly ground black pepper
1 ½ tablespoons minced fresh garlic (4 cloves)
1 ¼-pound boneless, skinless chicken breasts, cut into 1 ¼-inch piece
Directions:
Place a 12-inch non-stick skillet on the stove and turn the heat to medium-high.
Add 1 tbsp of butter and 1 tbsp of olive oil into the skillet. Swirl the skillet to distribute the oil and butter evenly.
Use paper towels to pat dry the chicken breasts.
In a mixing bowl, add Italian seasoning, salt, pepper, and flour. Whisk until well combined.
Add the chicken breasts into the flour mixture, then toss each until well coated. Remove any excess flour by shaking it.
Add the coated chicken breasts into the hot skillet, then cook each side for about 3 minutes until they turn golden brown.
Add the rest of the butter into the skillet and allow it to melt.
Add the garlic and parsley, then sauté for about a minute or until aromatic. Cook the chicken for a few more minutes or until they reach a temperature of 165 degrees C.
Serve immediately with steamed veggies or rice. Enjoy!
