Ingredients:
1 yellow onion, chopped, sauteed in sausage grease
½ c milk
20 oz. bag frozen Diced Hash Browns
Salt & Pepper, to taste
1 lb. Italian Sausage, cooked
7 Eggs
8 oz. brick of Mild Cheddar Cheese, grated
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Apply cooking spray to a 9×13-inch casserole dish.
Put a skillet on the stove and turn the heat to medium.
Add sausage into the hot skillet, then cook for a few minutes until crumbly and brown.
Add the onions and sauté for a few minutes until translucent. Transfer the sausage and onions into a large bowl.
Add the milk, eggs, cheddar cheese (minus 1 cup), salt, hash browns, and pepper into the bowl with the sausage and onions. Stir until well incorporated.
Transfer the mixture to the prepared casserole dish and spread it evenly.
Place the baking dish in the preheated oven and bake the casserole for about 35 minutes.
Sprinkle the reserved 1 cup of cheese over the casserole, then bake for 8 more minutes or until the cheese turns golden brown.
Remove the casserole from the oven and allow it to cool for about 15 to 20 minutes at room temperature to incorporate all the flavors.
