A big thanks to my dear friend, Abigail, for giving me this incredible recipe for stew! Oh, man, I love this so much! Aside from the rich beef flavour, it also has rice, veggies, and a lot of seasonings. A bowl of this stew will surely put a smile to your face! Ingredients:
2 lbs ground beef
2 medium onions, chopped
4 cans (14-½ oz each) stewed tomatoes, undrained
8 medium carrots, thinly sliced
4 celery ribs, thinly sliced
2 medium potatoes, peeled and cubed
2 c water
½ c uncooked long grain rice
3 tsp salt
1 tsp pepper
Directions:
Step 1: Place a Dutch oven on the stove and turn the heat to medium.
Step 2: Add in the beef and cook until brown and crumbly.
Step 3: Add in the onions and cook until translucent.
Step 4: Discard the excess grease.
Step 5: Add in the carrots, tomatoes, water, celery, potatoes, rice, salt, and pepper. Allow the mixture to boil.
Step 6: Cover and reduce the heat to low. Simmer for 30 minutes or until the rice and veggies are done.
Step 7: Remove the cover and allow it to simmer for another 20 to 30 minutes or until thick to your preference.
Step 8: Serve and enjoy!
Notes:
You can freeze the stew. Just make sure to thaw it in the fridge overnight.
When preparing, heat it in a saucepan and stir until done. Add more water if needed.
