Ingredients:
Caramelized Onions:
1 tbsp olive oil
3 yellow onions, large, sliced
¼ tsp salt
1 tbsp balsamic vinegar
Creamy Pasta Sauce:
1 tbsp olive oil
10 ounces mushrooms, sliced (I used button mushrooms)
6 ounces spinach
1 c half-and-half
1 c Parmesan cheese, shredded
¼ tsp salt
Pasta:
8 ounces farfalle pasta
Directions:
To Make the Caramelized Onions:
Step 1: Place a large skillet on the stove and turn the heat to medium-high.
Step 2: Add in 1 tablespoon of olive oil and allow it to become hot.
Step 3: Add in the onions and cook for about 10 minutes or until brown. Use a spatula to stir from time to time.
Step 4: Turn the heat down to medium and cook the onions for another 10 minutes, season with salt to taste.
Step 5: Cook the onions for another 10 minutes, then remove from the heat.
Step 6: Drizzle the pan with balsamic vinegar to deglaze and use a spatula to get the brown bits on the bottom.
Step 7: Place the caramelized onions on a clean plate.
Cook the Mushrooms and Spinach:
Step 1: Place a skillet on the stove and turn the heat to medium.
Step 2: Add in 1 tablespoon of olive oil and allow it to become hot.
Step 3: Add in the mushrooms and salt.
Step 4: Cook the mushrooms for 5 minutes or until soft. Make sure to stir from time to time.
Step 5: Add in the fresh spinach and cook on low heat until wilted.
To Make the Creamy Sauce:
Step 1: Add in the half-and-half into the mushrooms and spinach mixture, then allow it to boil.
Step 2: Reduce the heat and simmer for a few minutes.
Step 3: Add ¼ teaspoon of salt and ⅔ cup of shredded Parmesan cheese. Stir until well combined and melted.
Step 4: Put the caramelized onions back to the skillet together with the pasta sauce.
Step 5: Add in the cooked pasta and stir until well combined, then cook for a few minutes or until done.
Step 6: Remove from the heat and sprinkle more cheese on top of each serving.
Step 7: Serve and enjoy!
