Ingredients:
2 tablespoons olive oil
5 cloves garlic, minced
1 onion, chopped
3-5 pounds Beef Chuck Roast or Beef Cheek
⅓ c orange juice
1 c beef broth
¼ c lime juice
¼ c light brown sugar
1 teaspoon apple cider vinegar
1 tablespoon cumin
2 teaspoons Oregano
3-4 chipotle peppers in adobo sauce, chopped
2 teaspoons Kosher salt
OPTIONAL INGREDIENTS
Cilantro
Tortillas
Lime wedges
Onion
Directions:
Place a large skillet on the stove and turn the heat to medium-high.
Add olive oil and allow it to become hot.
Add the roast and sear each side for 4 minutes or until they turn brown.
Remove from the skillet and transfer them into the slow cooker.
Add the rest of the ingredients and orange juice into the food processor. Pulse everything until well blended.
Pour the mixture on top of the roast in the slow cooker.
Cover the slow cooker and cook for about 8 to 10 hours on a low setting or 6 hours on a high setting.
Remove the roast from the slow cooker, then use two forks to shred it into small pieces.
Put the shredded meat back to the slow cooker, then stir until well mixed. Cook for another 10 minutes on a high setting.
Serve hot with tortillas. Enjoy!
