This Enchilada Casserole is simply amazing! With this very simple set of ingredients, dinner with your loved ones will be awesome again! This recipe can feed up to 8 people. Ready in less than an hour, don’t waste another minute not knowing how delicious this casserole is. Enjoy!
Ingredients:
1 c salsa
6 flour tortillas (10 inches)
1 can (10 oz.) of enchilada sauce
2 c fresh or frozen corn
4 c shredded cheddar cheese
1 lb. ground beef (90% lean)
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Place a large skillet on the stove and turn the heat to medium.
Add the ground beef, then cook for a few minutes until crumbly and brown. Discard any accumulated grease.
Add the salsa and enchilada sauce, then stir until well blended. Remove from the heat.
Apply cooking spray to a 13×9-inch baking dish.
Arrange 2 tortillas overlapping each other to the bottom of the prepared baking dish.
Add ⅓ of the meat mixture on top of the tortillas followed by 1 cup of corn and 1 ⅓ cups of cheese. Repeat the process with the rest of the ingredients until everything is arranged in layers ending with cheese.
Place the baking dish in the preheated oven and bake the casserole for about 30 minutes or until the top turns golden brown.
Remove the casserole from the oven and allow it to rest for a few minutes at room temperature before serving.
Serve warm and enjoy!
Notes:
You can freeze this Enchilada Casserole. Just cover it and place it in the freezer. Thaw overnight and bake as usual until done.
Place any leftovers in an airtight container, then place them in the fridge. Reheat in the microwave for a few minutes before serving again.
