Ingredients:
1 Large Zucchini
1 Small Sweet Potato peeled
1 Medium Carrot peeled
¼ c Finely chopped green onion
3 Garlic Cloves minced
2-3 tablespoon Chopped Parsley
½ teaspoon Salt, or to taste
¼ teaspoon Ground Pepper or to taste
2 Large Eggs
½ c Rice Flour
¼ c Ground Parmesan Cheese
¼ c Olive or Avocado oil
Directions:
Step 1: Pulse the veggies in a food processor into small bits.
Step 2: Squeeze the grated zucchini to remove the water and put them into a large mixing bowl.
Step 3: Add the shredded carrot and potato into the bowl with the zucchini.
Step 4: Add the garlic, green onion, eggs, rice flour, cheese, parsley, salt, and pepper. Stir until well mixed.
Step 5: Place a large nonstick pan on the stove and turn the heat to medium.
Step 6: Add in oil and allow it to become hot.
Step 7: Add one tablespoon of the mixture and press it to form a round fritter. Repeat this process to the rest of the mixture. Make sure to cook 4 fritters at a time to not overcrowd them.
Step 8: Cook each batch of the fritters for 3 to 4 minutes on each side.
Step 9: Place the cooked fritters on a clean plate lined with paper towels to drain any excess oil.
Step 10: Serve hot with dip on the side. Enjoy!
