I have the pickiest kids, but they love this vegetable bake. They always make an exemption to this beautiful, delicious bake. Ingredients
2 tablespoons Butter
400 grams Potatoes, Peeled and sliced lengthways thinly
400 grams Pumpkin Thinly sliced
1 Can Crushed Tomatoes
½ c. Parmesan Cheese, grated
1 Grated Zucchini
1 teaspoon Mixed Herbs
1 Carrot, Grated
1 teaspoon Salt And Pepper To Taste
How to make Super Easy Vegetable Bake
Step 1: Prepare the oven. Preheat it to 180 degrees. Ready a 1.5 liters rectangular baking tray. Grease and set aside.
Step 2: In the microwave, melt the butter. Once melted, add the herbs.
Step 3: In a bowl, place the vegetables. Over the veggies, pour the butter mixture and mix well until the veggies are completely coated.
Step 4: In the prepared baking tray, layer the veggies. Over the veggies, pour the canned tomatoes. Then, season the veggies well.
Step 5: Using foil, tent the dish. Place in the preheated oven and bake the veggies for about 45 minutes. Uncover and sprinkle the veggies with cheese. Return to the oven and resume baking for another 15 minutes or until the cheese is golden and the veggies are cooked through.
Step 6: Remove from the oven when done and serve the easy vegetable bake right away. Enjoy!
