Ingredients:
1 x 1.8-2kg free-range/organic chicken
2 onions quartered
8 garlic cloves
1 c white wine
1 c chicken stock
fresh rosemary
for the rub
2 sprigs of fresh rosemary
2 garlic cloves
zest and juice of 1 lemon reserve lemon
salt & pepper to taste
4-5 tbsp olive oil
Directions:
Prepare the oven and preheat to 400 degrees F or 200 degrees C.
In a mixing bowl, add the chopped garlic and rosemary.
Add the lemon zest, lemon juice, olive oil, salt, and pepper. Stir until well blended.
Rub the mixture all over the chicken. Make sure to coat it completely.
Put the lemon into the cavity of the chicken.
Put the chicken into an oven-safe baking dish.
Add the garlic cloves, onions, chicken stock, rosemary, and wine.
Place it inside the preheated oven and roast for about 45 minutes or until done.
Remove the chicken from the oven and let it sit at room temperature for at least 15 minutes.
