I love making this Easy Tex Mex Casserole. It is my family’s favorite! So far, this is the best casserole recipe I have ever tried. The combination of all the ingredients is perfectly balanced. Ready in just 45 minutes, this casserole is what you just might need today. Enjoy!
Ingredients:
1 c salsa (I used a corn and black bean salsa – hence the black beans in the photos)
1 (15.25 oz.) can of corn, drained
1 green bell pepper, diced
1 (8 oz.) cornbread mix
1 lb. of ground beef
½ tsp salt
1 medium onion, diced
1 tsp ground cumin
Directions:
Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Apply cooking spray to a 9×9-inch casserole dish.
Place a skillet on the stove and turn the heat to medium-high.
Add ground beef, then cook for a few minutes until crumbly and brown.
Add bell pepper, salt, onion, and cumin. Sauté for a few minutes until soft.
Add corn and salsa, then stir until well incorporated. Cook everything for 10 more minutes.
Transfer the mixture to the prepared casserole dish and spread it evenly.
Refer to the directions provided on the package of the muffin mix on how to prepare it.
Pour the muffin mix over the ground beef mixture layer and spread it evenly.
Place the casserole dish in the preheated oven and bake for about 20 to 25 minutes or until the top turns golden brown.
Remove from the oven and allow it to rest for a few minutes at room temperature.
Serve right away. Enjoy!
Notes:
Place any leftovers in an airtight container, then place them in the fridge. Reheat in the microwave for a few minutes.
