Easy and simple! These Teriyaki Chicken Skewers are my new favorites! In just 1 hour and 30 minutes, these bad boys are ready for serving! Try this recipe now, and I promise you that you won’t be disappointed!
Ingredients:
2 pounds of chicken thighs (or breasts) cut into 1-inch cubes
Teriyaki Sauce/Marinade:
8 skewers
½ teaspoon sesame oil
1 c water
⅓ c soy sauce *low sodium recommended
1 tablespoon rice vinegar
1 tablespoon honey
2 cloves garlic, minced
⅓ c brown sugar
2 tablespoons cornstarch
½ tablespoon fresh ginger, minced
Optional Topping:
chopped green onion
sesame seed
Directions:
In a small mixing bowl, add water and cornstarch. Stir until well blended.
Place a medium saucepan on the stove and turn the heat to medium.
Add the cornstarch mixture and the rest of the ingredients into the pan. Stir everything until well blended. Simmer the mixture for a few minutes until it becomes thick.
Remove the pan from the heat and allow the sauce to cool completely at room temperature.
Meanwhile, in a large resealable bag, add the chicken.
Add ½ of the sauce, then seal the bag.
Shake the bag until the chicken thighs are well coated with the sauce.
Place the bag inside the fridge and marinate the chicken for at least 30 minutes.
Thread the chicken with the 8 skewers.
Grill the chicken for about 20 to 30 minutes. Make sure to turn every 3 minutes to evenly cook all sides.
Before the grilling time ends, brush the chicken with the rest of the teriyaki sauce.
Transfer the chicken onto a clean serving plate.

Notes:
You can garnish the chicken with sesame seeds and chopped green onions.
