Ingredients:
Taco Pie
1 c shredded Mexican Cheese Blend or cheddar cheese
½ c freshly diced tomatoes
½ lb. ground chuck
½ c diced onion
½ tbsp chili powder
1 tsp ground cumin
½ tsp paprika
¼ c chopped green onions
½ tbsp minced garlic
½ c salsa
½ to 1 tsp kosher salt
½ tsp freshly ground black pepper
½ (16 oz.) can of refried beans
2 (10-inch) flour tortillas
Sour cream
Simple Guacamole
Chopped cilantro for garnish
1 to 2 tbsp finely diced jalapeno peppers
Directions:
Prepare the oven and preheat to 190 degrees C or 375 degrees F.
Apply cooking spray to a 9-inch pie plate.
Place a large skillet on the stove and turn the heat to medium-high.
Add the beef, paprika, cumin, chili powder, salt, and pepper. Cook for a few minutes until crumbly and brown.
Add the minced garlic and onions, then sauté for a few minutes until aromatic and soft.
Cover a pie pan with a 10-inch tortilla. Add about 8 oz of the refried beans over and spread it evenly.
Spread the taco meat over as well. Repeat the process with the rest of the ingredients.
Place it in the preheated oven and bake for about 10 to 15 minutes or until the top turns golden brown.
Remove it from the oven and add ½ cup of salsa on top and spread it evenly.
Top with tomatoes,1 cup of shredded cheese, 2 tbsp of jalapeno peppers, and green onions.
Put it back in the oven and bake for 5 more minutes or until the cheese has completely melted.
Remove from the oven and allow it to cool at room temperature.
Sprinkle freshly chopped cilantro on top to garnish.
Serve warm with guacamole and sour cream!
