This easy strawberry pie slab is the perfect treat for spring and summer! Incredibly easy to whip up and excellent to bring to any summer getaway, picnic, potluck, or barbecue. This slab pie is filled with fresh strawberries. Super amazing, tastes & looks great, and is the best strawberry pie slab you’ll ever make!
INGREDIENTS
1 (11-ounce) package of refrigerated pie crust
Filling:
1 ¼ c. sugar
2 ½ c. lemon-lime soda (we used sprite)
1 tbsp lemon juice
6 ounces strawberry jello
⅓ c. cornstarch
frozen whipped topping or whipped cream, garnish
32 ounces fresh strawberries, hulled and sliced
How to make Easy Strawberry Slab Pie
Step 1: Prepare the oven. Preheat it to 450 degrees F.
Step 2: On a lightly floured surface, turn both pie crusts, stacking one on top of the other. Into a roughly 12 x 17-inch rectangle, roll the pie crusts out and place the crust into a large (10 x 15-inch) baking sheet.
Step 3: Under itself, tuck any excess crust, crimping the edges as needed. Using a fork, prick the bottom and sides of the crust.
Step 4: Place in the preheated oven and bake for about 9 to 11 minutes or until golden brown. Once done, take the baking sheet out of the oven and allow it to cool.
Step 5: Place the jello packet, sugar, and cornstarch in a large saucepan over medium heat. Stir well and pour in the sprite and lemon juice. Bring everything to a boil while stirring until thickened. Then, take the pan off the heat and allow the mixture to cool for about 10 to 15 minutes.
Step 6: On top of the cooled crust, arrange the sliced strawberries and carefully pour the cooled filling on top.
Step 7: Place the slab pie in the fridge for about 2 hours or so before slicing. Enjoy!
