Ingredients:
2 tbsp vegetable oil
1 tbsp brown sugar
6 chicken thighs, bone and skin on
¼ c distilled white vinegar
½ yellow onion
¼ tsp ground nutmeg
¼ tsp ground cloves
¼ tsp ground allspice
2 tsp thyme
3 green onions from tip to tail with root trimmed
½ jalapeno pepper de-seeded and de-veined
⅓ c soy sauce
Directions:
Place a large skillet on the stove and turn the heat to medium-high. Add a bit of oil and allow it to become hot.
Add the chicken thighs into the hot skillet, then sear each side for about 3 to 5 minutes or until they turn brown.
Add brown sugar, green onions, jalapeno, soy sauce, vinegar, allspice, onion, vegetable oil, nutmeg, thyme, and cloves into the food processor. Pulse a few times until the texture becomes pureed.
Place the seared chicken thighs into the slow cooker with the skin part facing upwards.
Pour the pureed sauce on top of the chicken thighs. Make sure to cover them completely.
Cover and seal the slow cooker, then cook for about 8 hours on a low setting.
