Super tender beef cooked in the slow cooker to perfection! 8 hours of cooking time is so worth it once you get a taste of this Slow Cooker Corned Beef with Cabbage! All you need are very simple ingredients for this recipe. I promise you that dinner with your friends and loved ones are going to be awesome with this dish. Enjoy!
Ingredients:
1 pound of baby potatoes (cleaned)
½ head cabbage (chopped)
2 c water
2 tbsp chopped fresh parsley leaves
1 3-4 pounds corned beef brisket, plus pickling spice packet
1 pound of carrots (cleaned and tops trimmed)
12 whole cloves of garlic
1 large onion (peeled)
1 c low sodium beef broth
2 bay leaves
Directions:
In a 6-quart slow cooker, lay the corned beef brisket with the fatty side facing up. Top it with the pickling spice tea.
Scatter the minced garlic cloves over the brisket.
Use a sharp knife to pierce the brisket to make shallow slits. Stuff it with 4 cloves of garlic. Scatter the rest of the garlic cloves around the slow cooker.
Peel the onion and slice it into quarters. Scatter them around the slow cooker as well, together with bay leaves.
Add water and beef broth on top of the brisket to cover it by about ½ inch. Make sure to add more water if needed.
Cover and seal the slow cooker, then cook the brisket for about 8 to 10 hours on a low setting until fork-tender.
After about 3 to 4 hours of cooking time, add the potatoes and carrots if you want. You can add the cabbage about 2 hours before the cooking time ends.
Slice the corned beef thinly.
Serve the corned beef with the potatoes and carrots, then sprinkle freshly chopped parsley on top to garnish.
