This slow cooker bacon, garlic chicken breast has been one of my favorite slow cooker and chicken recipe. This easy recipe guarantee tender, juicy, and moist chicken dinner wrapped with crispy bacon. Incredibly delicious, well-seasoned, and the best chicken weeknight meal you’ll ever make!
Ingredients
2 tsp garlic, minced (about 2 cloves)
4 chicken breasts, boneless and skinless
⅓ c. brown sugar
8-12 slices of bacon
Optional:
fresh parsley, chopped, for garnish
½ tsp salt, or to taste
¼ tsp black pepper, freshly ground or to taste
How to make Slow Cooker Bacon, Garlic Chicken Breast
Step 1: Place the brown sugar, minced garlic, and optional salt and pepper in a medium bowl. Mix well until combined.
Step 2: On a plate, place the chicken breasts, then rub them with half of the spice mixture.
Step 3: With 2-3 slices of bacon, wrap each chicken breast, beginning and ending on the bottom of the chicken breast.
Step 4: In the crock pot, place the wrapped chicken breasts in a single layer, seam-side down. You can snuggle the chicken breasts as evenly as you can. On top, sprinkle the rest of the brown sugar.
Step 5: Put the lid on and seal. Set to cook for 3 hours on low until the internal temperature of the chicken breast reaches 165 degrees F or 74 degrees C. To make the bacon crispy and add a nice caramelized color, you can place the dish in the broiler about 6 inches from the heating element for about 2 to 3 minutes (optional).
Step 6: To a cutting board or plate, transfer the chicken and tent with aluminum foil. Allow the chicken breasts to rest for about 5-10 minutes.
Step 7: Before serving, garnish the bacon, garlic chicken breasts with parsley. Enjoy!
Notes:
If using frozen chicken breasts, thaw them first. You can place the chicken in a sealed Zip top bag and completely submerge it in cold tap water for about 20 minutes for quick thawing. To expedite the process, you can pull the pieces apart as the chicken thaws. Then, replace with fresh cold water and submerge for another 10 to 20 minutes.
I suggest checking the chicken after 2 ½ hours in the first hours of cooking to check the doneness of the chicken.
Make sure to refrain from opening the lid during cooking.
