Ingredients:
1 ½ pound small red potatoes
4 slices bacon
¼ cup apple cider vinegar
1 ½ Tablespoons sugar
2 Tablespoons water
3 Tablespoons olive oil
1 teaspoon Dijon mustard
1 medium sweet onion chopped
2 Tablespoons fresh parsley chopped
salt & pepper to taste
Directions:
Step 1: Place a large pot with water on the stove and turn the heat to high.
Step 2: Add the potatoes and allow the water to boil. Cook the potatoes for about 15 minutes.
Step 3: Drain the water and put the potatoes into a bowl with iced water to cool.
Step 4: Slice the potatoes into large cuts.
Step 5: Arrange the bacon slices onto a cookie sheet.
Step 6: Place the bacon inside the oven and bake for 190 degrees C or 375 degrees F for about 7 minutes.
Step 7: Flip the bacon slices and cook the other sides for 7 more minutes or until they turn crispy.
Step 8: Transfer the crispy bacon slices onto a clean plate lined with paper towels to drain any excess fat.
Step 9: Add sugar, water, vinegar, Dijon mustard, and olive oil into a medium mixing bowl. Whisk until well blended.
Step 10: Place a large skillet on the stove and turn the heat to medium.
Step 11: Add 2 tbsp of bacon grease and allow it to become hot.
Step 12: Add the onion and saute for 3 minutes or until translucent.
Step 13: Add the potatoes and cook for 5 minutes or until they turn brown.
Step 14: Add the vinegar mixture and whisk until well combined. Cook for 2 more minutes.
