I never thought that salmon would taste better than tuna in a sandwich! You need to give this one a try and taste it yourself. Enjoy!
Ingredients:
15 ounces canned salmon large bones removed
2 Eggs
⅓ c shredded Parmesan cheese
½ c breadcrumbs
1 small bell pepper finely diced
2 tablespoons mayonnaise
2 tablespoons Dijon mustard
2 tablespoons chopped scallion
Salt to taste
Olive oil or vegetable oil for frying
Directions:
Step 1: Put the salmon in a mixing bowl and use a fork to flake it.
Step 2: Add all the ingredients into the bowl with the flaked salmon and stir until well combined.
Step 3: Make small patties out of the mixture by measuring ½ cup each.
For Frying:
Step 1: Place a large skillet on the stove and turn the heat to medium.
Step 2: Add in the oil and allow it to become hot.
Step 3: Add in the patties and fry each side for 5 minutes or until golden brown and crispy.
For Baking:
Step 1: Drizzle olive oil on a large cookie sheet.
Step 2: Place the salmon patties into the prepared cookie sheet and arrange them on the bottom.
Step 3: Place the cookie sheet inside the oven and bake for 15 minutes at 425 degrees F.
Step 4: Flip the patties and bake for another 5 minutes or until done.
Step 5: Remove from the oven and serve. Enjoy!
