Ingredients:
For the pork chops:
4 medium boneless pork chops
1 tsp garlic powder
2 tsp brown sugar
1 tbsp smoked paprika
2 tbsp olive oil (use less if desired)
salt and pepper (to taste)
For the vegetables:
2 tbsp olive oil (use less if desired)
2 tsp lemon juice
1 c frozen green beans
salt and pepper (to taste)
1 c frozen baby carrots
4-6 medium potatoes, chopped into small 1-inch chunks
fresh parsley for garnish (if desired)
2 tsp dried parsley (or freshly chopped)
1 tsp garlic powder
Directions:
Prepare the oven and preheat to 200 degrees C or 400 degrees F.
In a mixing bowl, add brown sugar, olive oil, garlic powder, paprika, pepper, and salt. Stir until well blended.
Rub each side of the pork chops with the oil mixture.
Scatter the baby carrots, potato slices, and green beans onto a large pan.
Drizzle lemon juice and olive oil over the veggies.
Sprinkle parsley, salt, pepper, and garlic powder over the veggies, then toss until well coated.
Lay the pork chops over the veggies.
Place the pan inside the preheated oven and bake the veggies and pork chops for about 20 minutes or until done.
Remove from the oven and let them rest for a few minutes at room temperature.
Sprinkle freshly chopped parsley on top to garnish.
