Ingredients:
2 tbsp olive oil
1 large zucchini
Kosher salt
Directions:
Prepare the oven and preheat to 107 degrees C or 225 degrees F.
Line with parchment paper two large baking sheets.
Use a mandolin to slice into a 3-inch thickness.
Place the zucchini slices onto paper towels, then cover and press them to remove most of the liquids.
Arrange them onto the prepared baking sheet. Make sure to leave a bit of space between each slice.
Brush each zucchini slice with olive oil.
Sprinkle salt all over the zucchini slices.
Place them inside the preheated oven and bake for about 2 hours or until they turn brown.
Remove from the oven and allow them to cool for a few minutes at room temperature.
Serve and enjoy!
