Ingredients:
1 pound Chicken Breast Boneless, skinless, cut into bite-size pieces
½ teaspoon Garlic Powder
¼ teaspoon Chili Flakes
Sea salt and pepper, to taste
2 tablespoons Olive Oil divided
1 inch Ginger thumb size, fresh, chopped
1 Large Bell Pepper chopped into bite-sized pieces
1 Purple Onion chopped
⅓ c Fresh Orange Juice
¼ c Low sodium soy sauce or coconut aminos
1½ tablespoons Cornstarch
1 teaspoon Sesame Seeds
1 tablespoon Sliced Scallions or green onions
Orange slices to garnish optional
Directions:
Step 1: Place a large non-stick pan on the stove and turn the heat to medium.
Step 2: Add 1 tablespoon of oil and allow it to become hot.
Step 3: Add the chicken, chilli flakes, garlic powder, salt, and pepper. Stir and cook for a few minutes until the chicken turns golden brown.
Step 4: Remove the chicken from the skillet and place them on a clean plate.
Step 5: Add the rest of the oil in the same skillet and allow it to become hot.
Step 6: Add the ginger, onion, and bell pepper. Sauté for 2 to 3 minutes or until aromatic and translucent.
Step 7: In a small mixing bowl, add the soy sauce, orange juice, and cornstarch. Whisk until well combined.
Step 8: Spread the sauce on top of the veggies. Stir until well mixed and make sure to scrape the bottom to get the brown bits.
Step 9: Put the chicken back to the pan and toss until well coated with the sauce and hot.
Step 10: Remove from the heat.
Step 11: Sprinkle sesame seeds and scallions on top.
Step 12: Serve with orange slices. Enjoy!
