Ingredients:
½ c Parmesan cheese, grated
1 c heavy cream (double cream in the UK)
6 tbsp all-purpose flour
3 large boneless and skinless chicken breasts, sliced into thin cutlets
¼ tsp oregano
⅓ c sundried tomatoes, chopped
2 tbsp olive oil
3 cloves garlic, minced
¼ tsp ground black pepper
2 tbsp butter
1 c chicken stock
1 tbsp fresh basil leaves
¼ tsp thyme
½ tsp salt
1 tbsp chili flakes
Directions:
Sprinkle salt and pepper over the chicken breasts, then toss them until all sides are coated well.
Add flour into a large bowl, then add each chicken breast to it. Toss again until coated and shake off any excess.
Place a large skillet on the stove and turn the heat to medium. Add butter and oil, then allow the butter to melt.
Add the chicken breasts, then cook each side for about 5 minutes or until they turn golden brown. Remove the chicken from the skillet and place them onto a clean plate.
In the same skillet, add garlic and sauté for about a minute just until aromatic.
Add the chicken stock, then scrape the bottom of the skillet to get the browned bits. Stir until well blended.
Reduce the heat to medium-low, then add Parmesan cheese and heavy cream. Simmer for a few minutes. Add thyme, oregano, chili flakes, pepper, and salt. Stir everything until well incorporated.
Put the chicken breasts back into the skillet together with the sundried tomatoes, then toss everything until well combined.
Simmer for additional 2 minutes. Remove from the heat.
Garnish each serving with freshly chopped basil.
Serve over rice or pasta. Enjoy!
Notes:
Feel free to use skinless chicken thighs for this recipe instead of chicken breasts.
Leftovers can last for 3 days in the fridge given that they are stored in an airtight container. Reheat for a few minutes before serving again.
