Ingredients:
Sour cream, drizzling
2 cloves garlic, thinly sliced
1 tablespoon paprika
3 cups shredded Cheddar
kosher salt
2 pounds of baby potatoes, halved and quartered if large
8 slices of bacon, cooked
¼ cup sliced green onions, plus more for garnish
Cooking spray
Freshly ground black pepper
Directions:
Line aluminum foil to the bottom of the slow cooker, then coats it with cooking spray.
Put ½ of the potatoes, 1 ¼ cups of the cheese, ½ of the garlic, ⅓ of the crispy bacon, ½ paprika, and ½ of the green onions into the prepared slow cooker. Repeat the process until everything is arranged in layers. Add salt and pepper on top to taste.
Cover and seal the slow cooker, then cook the dish for about 5 hours on a high setting.
Open the slow cooker 20 minutes before the cooking time ends, then scatter the rest of the bacon and cheese on top.
Cover and seal the slow cooker once more, then cook for additional 20 minutes or until done.
Uncover, then drizzle sour cream and sprinkle green onions on top.
Serve immediately. Enjoy!
