Ingredients:
Lemon Bundt Cake
1 (3.9 ounces) pkg. Instant Lemon Pudding Mix
1 c Olive Oil
½ c Water
1 (15.25 ounces) pkg. Lemon Cake Mix (Preferably Betty Crocker)
4 large eggs
1 c Sour Cream
Lemon Glaze
2 tablespoons FRESH Lemon Juice
1 c Powdered Sugar
Lemon Cream Cheese Icing
2 ounces Cream Cheese (softened)
Yellow Food Coloring
2 c Powdered Sugar
1 tablespoon butter (softened)
2 tablespoons FRESH Lemon Juice
1 tablespoon Milk
White Chocolate
6 ounces White Chocolate Chips or White Chocolate Wafers
Directions:
For Lemon Bundt Cake:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Apply cooking spray and sprinkle flour in a 10-cup Bundt pan.
In a large bowl, add the eggs, cake mix, sour cream, instant pudding mix, water, and olive oil. Whisk until well combined.
Transfer the batter into the prepared Bundt pan and press it evenly.
Place it inside the preheated oven and bake for about 45 minutes or until a toothpick comes out clean after inserting it in the middle.
Remove from the oven and let the cake rest for at least 20 minutes at room temperature.
For the Lemon Glaze:
In a mixing bowl, add 2 tablespoons of lemon juice and 1 cup of powdered sugar. Stir until well blended.
Drizzle the glaze on top of the cake and spread it evenly.
For the Lemon Cream Cheese Icing:
In a mixing bowl, add 1 tablespoon of butter and 2 ounces of cream cheese. Stir until well blended.
Add 1 tablespoon of milk and 2 cups of powdered sugar, then beat until well combined.
Add the yellow food colouring and 2 tablespoons of lemon juice. Beat until well blended.
Transfer about 12-ounces of the glaze into a frosting bag. Cut off the edge, then pipe the glaze over the cake.
For the White Chocolate:
Add the chocolate chips into a heat-proof mixing bowl, then place them inside the microwave and allow them to melt completely.
Drizzle the melted chocolate over the cake.
Place it inside the fridge to chill.
Serve and enjoy!
