How to make Italian Chicken Pasta in Creamy White Wine Parmesan Cheese Sauce
Step 1: To make the chicken thin, cut the chicken breasts horizontally. Or you can use thin chicken breasts instead. Then, pat dries the chicken with a paper towel.
Step 2: Place the flour, salt, black pepper, garlic powder, and Italian seasoning in a large bowl. Mix well until combined. Coat the chicken breasts in the flour mixture using a fork or tongs, pressing and flipping the chicken to coat both sides. Set aside.
Step 3: In a large skillet, heat 2 tbsp olive oil over medium-high heat. Add the floured-coated chicken breasts into the hot oil and sear for about 4 to 5 minutes per side or until both sides of the chicken breasts are golden brown and completely cooked, flipping once. Set the seared chicken breasts aside when done.
Step 4: To the pan, place the butter, diced yellow onion, and minced garlic cloves. Cook for about 2 minutes over medium-high heat until the onions and garlic are translucent. Then, add the chopped scallions along with the tomatoes. Next, add 1 tbsp flour. Stir well until blended.
Step 5: Into the pan, add the heavy cream, wine, Italian Seasoning, salt, and red pepper flakes. Bring everything to a simmer, then add half a c. of the shredded Parmesan cheese. Mix using a whisk or wooden spoon until the mixture is smooth.
Step 6: Following the package directions, cook the pasta in a pot with salted boiling water until al dente. Drain when done, but do not rinse.
Step 7: To assemble, place the cooked pasta in the skillet and toss it with the sauce. Cook for another 2 to 4 minutes over low heat. If needed, season with salt. Next, add the chicken and cook for 5 minutes more until warmed through.
Step 8: To serve, top the pasta with the chicken or serve the chicken next to the pasta. If desired, sprinkle with Parmesan cheese. Enjoy!
