Ingredients:
2 tbsp vegetable oil
4 garlic cloves, minced
½ c honey
Salt and pepper to taste
3-4 boneless, skinless chicken breasts
¼ c ketchup
3 tsp cornstarch dissolved in ¼ c water
⅓ c onion, diced
⅓ c soy sauce
Rice for serving
Sesame seeds & green onion for topping
Directions:
Add the chicken to the Instant Pot and arrange them in a single layer.
Sprinkle salt and pepper over the chicken, then toss until well coated.
Add honey, onion, soy sauce, garlic, oil, and ketchup into a mixing bowl. Stir everything until well blended.
Pour the mixture on top of the chicken. Cover the Instant Pot.
Cook the chicken breasts for about 15 minutes on a high setting.
Transfer the chicken onto a clean plate.
To make the slurry, add ¼ cup of water and 3 tsp of cornstarch into a mixing bowl. Stir until well blended.
Pour the slurry into the Instant Pot with the sauce, then stir until well blended.
Press the “Sauté” button on the Instant Pot, then cook the sauce for 5 minutes or until a bit thick.
Slice the chicken breasts into small cuts, then put them back into the Instant Pot. Stir until well coated with the delicious sauce.
Garnish each serving with sesame seeds and chopped green onions.
Serve hot over rice. Enjoy!
