Ingredients:
2 pounds Beef Chuck Roast cut into 2-inch chunks; excess fat removed
1 Tsp Kosher Salt
½ teaspoon Coarsely Ground Black Pepper
2 tablespoons Gluten-free All-Purpose Flour or Whole Wheat for non-gluten
2 tablespoons Olive Oil
½ Yellow Onion Chopped Large
4 Garlic Cloves minced
1 Large Carrot or two small-medium, cut into 2-inch chunks
2 Yukon Gold Potatoes diced into 2-inch pieces
2 c Beef Broth
¼ c Tomato Paste
1 tablespoon Worcestershire Sauce
1 Bay Leaves
2 teaspoons Fresh Thyme Leaves to garnish
Directions:
Prepare the oven and preheat to 160 degrees C or 325 degrees F.
Season with salt and pepper the beef chunks.
Sprinkle the beef chunks with flour and rub to make sure they are well coated.
Place a Dutch oven on the stove and turn the heat to medium.
Add olive oil and allow it to become hot.
Add the beef chunks and sear each side for about 4 minutes or until they turn brown.
Remove the beef chunks from the skillet onto a clean plate.
In the same skillet, add garlic, onions, and carrots. Saute until aromatic and soft. Make sure to stir from time to time.
Add the beef broth, potatoes, bay leaf, tomato paste, Worcestershire sauce, and thyme. Scrape the bottom of the skillet to get the brown bits.
Simmer for a few minutes, then put the beef chunks back to the pot.
Cover it with a lid, then remove it from the heat.
Place the Dutch oven inside the preheated oven and cook for about 2 hours or until the beef chunks are fork-tender.
Add more seasonings if needed.
Serve hot and enjoy!
