Tender, packed with flavor, and the best chicken dinner you’ll ever make! This herb-roasted chicken thighs in creamy white wine sauce is an easy skillet meal. Silky, smooth, and super addictive. For a filling weeknight dinner, serve this with rice, mashed potatoes, or your favorite roasted veggies.
Ingredients
3 pounds chicken thighs, bone-in, skin-on
1 tbsp olive oil
1 medium onion, diced
3 garlic cloves, chopped
Italian seasoning, (divided)
Salt and pepper
2 tbsp butter
3-4 thyme sprigs (leaves only)
1 tbsp flour, for thickening the sauce
½ c. heavy cream
Salt and pepper to taste
½ c. white wine
1 c. chicken stock
How to make Herb Roasted Chicken Thighs in Creamy White Wine Sauce
Step 1: Prepare the oven. Preheat it to 400 degrees F.
Step 2: In a large skillet, heat 1 tbsp olive oil over medium-high heat. In the meantime, season the chicken thighs with salt, pepper, and Italian seasoning. Once the oil is hot, add the chicken thighs to the skillet, skin down, and sear for about 4 to 5 minutes. Flip the chicken thighs and continue to cook the other side for another 4 minutes. Set the chicken aside when done.
Step 3: In the same pan, add 2 tbsp butter along with the onion. Saute for about 3 to 4 minutes until the onion is brown. Then, add the chopped garlic, thyme, and 1 tsp Italian seasoning. Continue to cook for a minute more.
Step 4: Next, add 1 tbsp flour and cook for a minute only in the oil of the pan until the flour is no longer white. Then, gradually pour in the wine. Adjust the heat to high and cook for a couple of minutes.
Step 5: Into the pan, add the chicken stock along with the heavy cream. Stir well and continue to cook for another 5 minutes until the mixture has slightly reduced.
Step 6: To taste, season with salt and pepper.
Step 7: Add the chicken thighs back to the pan.
Step 8: Place the dish in the preheated oven and bake for about 35 minutes, uncovered.
Step 9: Remove from the oven when done and serve the herb-roasted chicken thighs in creamy white wine sauce immediately with your favorite roasted veggies, rice, or mashed potatoes. Enjoy!
