Talk about a complete meal! This Ground Beef Stuffed Pepper Skillet is such a delight. You are sure to feel loved with each spoonful of this amazing dish! It will only take you half an hour to prepare and cook this. A must-try recipe that you and your loved ones are going to enjoy!
Ingredients:
14.5 ounces diced tomatoes
¼ teaspoon black pepper
1 ½ c cheese
3 cloves garlic, minced
½ c red bell pepper
2 tablespoons tomato paste
¾ c white rice, I use Jasmine
2 c beef broth
1 teaspoon Italian seasoning
½ onion, diced
½ teaspoon salt
½ c green bell pepper
1 pound of ground beef
1 tablespoon parsley
Directions:
Place a skillet on the stove and turn the heat to medium. Add the ground beef, then cook for a few minutes until crumbly and brown.
Add the garlic and onion, then sauté for a few minutes until aromatic and soft.
Add beef broth, rice, tomato paste, Italian seasoning, bell peppers, and tomatoes. Stir until well combined and let the mixture boil.
Turn the heat down to low, then simmer for about 18 minutes or until the rice is soft.
Use a fork to fluff the rice, then sprinkle shredded cheese on top.
Cover the skillet and let the cheese completely melt. Sprinkle freshly chopped parsley on top.
Serve and enjoy!
Notes:
You can use ground chicken or ground turkey for this recipe if you prefer.
Make sure to let the mixture boil before reducing the heat.
You can use whatever color of bell pepper is available.
I suggest using Jasmine rice for this recipe.
Place any leftovers in an airtight container, then place them in the fridge. Reheat for a few minutes before serving again.
