Ingredients:
1 onion, thinly sliced
2 tbsp butter
14-16 oz. smoked sausage, sliced
1 tbsp Olive oil
Salt to taste
1 ½ tsp paprika
⅓ c parsley, chopped
3 garlic cloves, minced or pressed through a garlic press
1.5 to 2 lbs. medium-size red skin potatoes, peeled and sliced into ½” thick circles (about 2 ¾ pounds)
1 ½ c chicken stock
¾ tsp freshly cracked black pepper
Directions:
Place a large deep skillet on the stove and turn the heat to medium. Add 1 tbsp of oil and allow it to become hot.
Add the sausage into the hot skillet, then cook for a few minutes until brown. Move the cooked sausage onto a clean plate.
In the same skillet, add butter and allow it to melt.
Add the onions and sauté for a few minutes until caramelized.
Add the garlic and sauté for a minute until aromatic. Sprinkle salt, paprika, and pepper to season.
Add the potatoes, chicken stock, and parsley. Stir until well mixed. Scrape the bottom of the skillet to get the browned bits.
Cover the skillet with the lid, then reduce the heat to medium-low and simmer everything for about 15 minutes.
Remove the lid, then simmer for 10 more minutes or until the potatoes are soft.
Put the browned sausage back into the skillet, then toss everything until well combined.
Serve and enjoy!
Notes:
You can make this Goulash with Smoked Sausage ahead of time. It can last up to 2 days in the fridge.
Feel free to use any kind of sausage for this recipe.
I suggest using red skin potatoes for this recipe and not russet potatoes. You don’t want this dish to become very starchy.
