This incredible dish is a combination of delicious flavors! In 1 hour and 15 minutes, you can have the most satisfying dinner! This is a must-try recipe indeed!
Ingredients:
4 chicken drumsticks
3 strips bacon, cut into ½-inch pieces
1 ½ c red wine
4 chicken thighs
8 oz. mushrooms, thickly sliced
1 medium onion, quartered then thinly sliced
8 oz. pearl onions, peeled
4 cloves garlic, minced
Beurre Manie
2 tbsp tomato paste
2 tsp fresh thyme leaves
Optional: ¼ c brandy
4 medium carrots, cut into 1-inch pieces
1 c chicken stock
Directions:
Add the chicken pieces into a large mixing bowl together with wine, chicken stock, and brandy. Toss everything until well incorporated. Make sure to completely coat the chicken.
Place a large skillet on the stove and turn the heat to medium-high.
Add the bacon, then cook for a few minutes until crispy. Move the bacon onto a clean plate lined with paper towels to drain excess grease.
Remove the chicken pieces from the bowl with the marinade, then pat them dry with paper towels.
Add the chicken into the same skillet with the bacon grease, then sear each side for a few minutes until they turn golden brown. Transfer onto a clean plate.
Transfer the grease from the skillet into a heat-proof baking dish, leaving only 2 tablespoons of it.
Add the carrots and onion slices into the skillet, then sauté for a few minutes. Add the garlic and sauté for a minute or until aromatic.
Push the veggies to one side of the pan, then add the tomato paste. Stir and cook for about a minute to remove the raw taste.
Add the marinade into the skillet, then scrape the bottom to get the browned bits. Stir everything until well blended.
Place the chicken over the mixture, then top with freshly chopped thyme. Reduce the heat to low, then simmer for about 20 minutes.
Place a skillet on the stove and turn the heat to medium. Add 1 tbsp of the reserved bacon grease and allow it to become hot.
Add the mushrooms and sauté for a few minutes until soft.
Scatter the onions over the chicken pieces, then cook for about 10 minutes. Transfer the chicken onto a clean plate.
In a mixing bowl, add the Beurre Manie and stir until well blended. Add the mixture into the pan, then stir and cook for a few minutes until thick. Add salt and pepper.
Put the chicken back into the pan together with the sauteed mushrooms and cooked bacon. Stir everything until well incorporated.
Remove from the heat and sprinkle freshly chopped thyme on top.
