Breakfast will always be my favourite meal of the day because of these delicious pancakes! This recipe has always been a part of my family since I was a little kid. My grandma used to make these heavenly treats all the time! I am so grateful to her for sharing this recipe with me because now, I get to share it with you as well. How awesome is that? Try it now. Ingredients:
4 tbsp unsalted butter, melted, plus more for skillet
1 tbsp aluminium-free baking powder
1 large Egg
1 ½ c (195 grams) all-purpose flour
1 ¼ c (295 ml) milk, dairy or non-dairy
1 tsp vanilla extract
2 tbsp sugar
½ tsp of fine sea or table salt or ¾ tsp kosher salt
Directions:
For the Batter:
In a mixing bowl, add baking powder, sugar, salt, and flour. Whisk until well mixed.
Add milk into a heat-proof bowl, then place it inside the microwave. Heat for a few minutes until lukewarm.
In the bowl with the lukewarm milk, add butter vanilla extract, and egg. Whisk until well blended.
For the Pancakes:
Place a large skillet on the stove and turn the heat to medium. Allow it to become hot.
Create a hole in the middle of the flour mixture, then add the milk mixture. Mix everything until just combined.
Add a bit of butter into the skillet and allow it to melt.
Add ¼ cup of the batter into the hot skillet, then use a spatula to flatten it out. Cook each side for about 2 minutes or until brown.
Transfer the pancake onto a clean serving plate. Repeat the process with the rest of the batter.
Serve the pancakes immediately with syrup, berries, and butter. Enjoy!
