This Cowboy Stew will be your new favorite, I’m 100 percent sure! This recipe is very easy to put together. Just follow these simple steps, and you are good to go!
Ingredients:
2 (16 oz.) cans of baked beans, with liquid
1 (14.5 oz.) can of petite diced tomatoes, with liquid
1 tsp chili powder
1 medium onion, diced
3 cloves garlic, minced
2 medium russet potatoes, peeled and cut into ½-inch cubes
1 (7 oz.) can of chopped green chilies, with liquid
2 tbsp parsley, chopped
1 ½ lbs. ground beef, 80/20
1 (15 oz.) can of sweet corn, with liquid
1 c water
1 ½ tsp salt
½ tsp black pepper
2 (12 oz.) packages of kielbasa sausage, cut into ½-inch slices
4 slices of bacon, chopped
3 tbsp all-purpose flour
Directions:
Place a skillet on the stove and turn the heat to heat to medium.
Add the bacon, then cook for a few minutes until crispy. Transfer the crispy bacon onto a clean plate lined with paper towels to drain excess grease.
In the same skillet with the bacon grease, add the sausage and cook for a few minutes until crumbly and brown. Transfer onto the plate with the bacon.
In the empty skillet, add beef, garlic, and onion. Cook for a few minutes until brown and soft.
Add flour, chili powder, salt, and pepper. Stir everything until well blended. Simmer the mixture for about a minute.
Add the potatoes, water, baked beans, green chilis, tomato slices, sweet corn, cooked sausage, and bacon into the skillet. Stir until well incorporated. Let it boil.
Reduce the heat to low, then cover the skillet and simmer the stew for about an hour.
Sprinkle freshly chopped parsley on top to garnish.
