Ingredients:
For the Cookies:
½ c canola oil
1 tablespoon vanilla essence OR 2 teaspoons vanilla extract
2 teaspoons baking powder
3 Eggs
2 c plain flour / all-purpose flour
¾ c unsweetened cocoa powder
½ c brown sugar, lightly packed
1 c caster sugar
For the Coating:
1 tablespoon corn starch/cornflour
½ c icing sugar / powdered sugar
Directions:
Prepare the oven and preheat to 340 degrees F or 170 degrees C.
Line with baking paper 2 cookie trays, then apply cooking spray on them.
In a large mixing bowl, add the sugars, oil, vanilla, and eggs. Whisk until well blended.
Add the cocoa powder, baking powder, and flour. Whisk until well mixed.
In another mixing bowl, add the cornstarch and icing sugar. Whisk until well blended.
Shape small balls out of the mixture, then gently press each to flatten.
Coat each with the flour coating.
Arrange the cookies onto the prepared baking trays in a single layer. Make sure to leave a space between each cookie.
Place them inside the preheated oven and bake for about 11 minutes or until done.
Remove from the oven and allow them to cool completely at room temperature.
Serve and enjoy!
Notes:
Place any leftovers in an airtight container, then place them inside the fridge. They can last up to one week.
