Ingredients:
For the Cookies
3 Eggs
2 c plain flour / all-purpose flour
1 tablespoon vanilla essence OR 2 teaspoons vanilla extract
1 c caster sugar
¾ c unsweetened cocoa powder
½ c canola oil
2 teaspoons baking powder
½ c brown sugar, lightly packed
For the Coating
1 tablespoon corn starch/cornflour
½ c icing sugar / powdered sugar
Directions:
Prepare the oven and preheat to 340 degrees F or 170 degrees C.
Apply cooking spray, then line with baking paper two large cookie trays.
In a large mixing bowl, add vanilla, sugars, eggs, and oil. Whisk until well blended.
Add the cocoa powder, flour, and baking powder. Stir until well mixed.
In another mixing bowl, add the cornstarch and icing sugar. Whisk until well blended.
Form small balls out of the mixture, then gently press each to flatten.
Coat each with the flour coating.
Lay the cookies onto the prepared baking trays. Make sure to leave a space between each cookie.
Place them inside the preheated oven and bake for about 11 minutes or until done.
Remove from the oven and allow them to rest for a few minutes at room temperature.
Serve warm and enjoy!
Notes:
Place any leftovers in an airtight container, then place them inside the fridge. They can last up to one week.
