These heavenly treats are so good that you will crave them all the time! Serve these Crinkle Cookies with milk or coffee, and you have yourself a snack to remember! Ingredients:
For the Cookies
½ c canola oil
1 c caster sugar
½ c brown sugar, lightly packed
3 Eggs
1 tablespoon vanilla essence OR 2 teaspoons vanilla extract
2 c plain flour / all-purpose flour
¾ c unsweetened cocoa powder
2 teaspoons baking powder
For the Coating
½ c icing sugar / powdered sugar
1 tablespoon corn starch/cornflour
Directions:
Prepare the oven and preheat to 340 degrees F or 170 degrees C.
Apply cooking spray, then line with baking paper two large cookie trays.
In a large mixing bowl, add sugars, oil, vanilla, and eggs. Whisk until well mixed.
Add the cocoa powder, flour, and baking powder. Stir until well mixed.
In another mixing bowl, add the cornstarch and icing sugar. Whisk until well mixed.
Form small balls out of the dough, then gently press each to flatten.
Coat each with the flour coating.
Arrange the cookies onto the prepared baking trays. Make sure to leave a space between each cookie.
Place them inside the preheated oven and bake for about 11 minutes or until done.
Remove from the oven and let them rest for at least 10 minutes at room temperature.
Serve warm and enjoy!
Notes:
Place any leftovers in an airtight container, then place them inside the fridge. They can last up to a week.
