This Chile Rellenos Casserole is my go-to dish whenever I want something cheesy and delicious! This recipe is very easy to prepare. All you need to do is to follow these steps, and you are good to go! This recipe can yield up to 4 servings. Make sure to double it if you are serving more than four people. Loaded with incredible flavors, this casserole is surely a must-try. Enjoy!
Ingredients:
⅛ c flour
2 Eggs
¾ c milk
½-pound ground beef (or ground turkey or chicken)
½ teaspoon salt
½ teaspoon pepper
1 10-ounces can of whole green chilies (or 2 roasted fresh green chiles)
¼ onion (chopped)
1 teaspoon cumin
1 ½ c cheddar cheese
Directions:
Prepare the oven and preheat to 190 degrees C or 375 degrees F.
Place a skillet on the stove and turn the heat to medium-high.
Add the ground beef, then cook for a few minutes until crumbly and brown.
Add the onion and sauté for a few minutes until soft. Discard any accumulated fat.
Add salt, pepper, and cumin to season. Stir everything until well blended.
Apply cooking spray to a pan, then lay the whole green chilis in it. Make sure to cover the entire bottom. Set aside the chilis and chop them for later use.
Scatter the browned beef on top of the chilis.
Sprinkle the reserved chopped green chilis and cheese over the beef layer.
In a mixing bowl, add milk and eggs. Whisk until well blended. Pour the mixture on top of the cheese layer into the baking pan.
Place the pan in the preheated oven and bake for about 35 to 40 minutes or until done.
Remove from the oven.
Serve immediately and enjoy!
Notes:
I highly recommend serving this hot for the best experience! The cheese is best eaten while melted and hot!
Place any leftovers in an airtight container, then place them in the fridge. Reheat in the microwave for a few minutes just until warm.
