This is Chicken Pot Pie at its finest! This recipe is my all-time favorite. I always prepare this for my loved ones. This pie is best served with your family. With 8 servings, everyone will taste how delicious it is. Enjoy!
Ingredients:
Chicken:
1 tbsp olive oil
1 tsp dried basil
½ tsp salt
3 lbs. chicken breast
½ tsp ground black pepper
Pot Pie:
1 beaten Egg
1 c milk
⅔ c butter
½ tsp dried basil
3 c frozen mixed vegetables, thawed and patted dry
pinch of garlic powder
½ an onion, chopped
Salt and pepper to taste
3 ½ c chicken broth
⅔ c flour
pie crust Either 4 store-bought- 2 tops and 2 bottoms
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Sprinkle salt, basil, and pepper over the chicken breasts, then rub each until well coated.
Arrange the chicken breasts into a baking dish in a single layer, then drizzle olive oil on top of them.
Place the baking dish in the preheated oven and bake the chicken breasts for about 25 to 30 minutes or until done.
Remove the chicken from the oven and allow them to cool at room temperature for a few minutes. Chop each chicken into small pieces.
Prepare the crust, then place it inside the fridge to chill.
Adjust the heat of the oven to about 375 degrees F.
Brush a 9×13-inch baking dish with butter.
Place a pot on the stove and turn the heat to medium.
Add butter and allow it to melt.
Add onions into the pot, then sauté for a few minutes until soft.
Add flour, then whisk and cook for about a minute to remove the raw taste.
Add the chicken broth and whisk until well blended.
Add milk and stir until well blended. Simmer the mixture for about a minute until a bit thick.
Add the chicken, salt, basil, garlic powder, mixed veggies, and pepper. Stir everything until well blended. Remove the pot from the stove.
Sprinkle flour onto a flat surface, then place the dough on it. Unroll the dough.
Place the prepared crust into the prepared baking dish and press it evenly to the sides and bottom. Pour the sauce over the crust.
Place the second crust over the sauce and seal the sides by pressing them. Poke small holes on top of the pie. Brush the egg wash on top of the pie.
Place the pie in the preheated oven and bake for about 30 minutes.
Cover the pie with foil, then bake for 30 more minutes.
Remove the pie from the oven and allow it to cool for a few minutes.
