Heartwarming soup that the entire family is going to love! This Easy Chicken Noodle Soup is ready in just about an hour. If you want to feel loved today, then you have got to give this recipe a try!
Ingredients:
2 medium celery sticks, finely chopped
6 ounces rotini pasta
1 tablespoon sea salt, or to taste
4 chicken thighs, skins removed (bone-in or boneless)
6 c water
8 c chicken broth, we used low sodium
1 teaspoon Mrs. Dash, or your favorite salt-free seasoning
3 tablespoons fresh or frozen dill
2 carrots, sliced into rings
1 garlic clove, pressed
2 tablespoons olive oil, to sauté vegetables
1 medium onion, finely chopped
Directions:
Place a large pot with 8 cups of broth, 1 tablespoon of sea salt, and 6 cups of water. Turn the heat to high and allow the mixture to boil.
Add the chicken thighs into the boiling water, then cook for about 20 minutes. Remove any scums that float.
Place a large skillet on the stove and turn the heat to medium-high. Add 2 tablespoons of oil and allow it to become hot.
Add the celery and onion, then sauté for a few minutes until soft. Move the sauteed veggies into the pot with the chicken soup.
Add the carrots and pasta into the pot, then cook for about 15 minutes.
Transfer the chicken thighs onto a clean plate, then use two forks to shred them into small pieces. Remove any bone and fat.
Put the shredded chicken back into the pot.
Add 1 teaspoon of Mrs. Dash seasoning and a bit of salt. Stir until well blended.
Add a garlic clove, then press it into the pot.
Sprinkle about 3 tablespoons of dill into the soup.
Serve right away. Enjoy!
