This easy copycat recipe of Cajun Chicken Alfredo with Broccoli is a must-try! INGREDIENTS
1 lb chicken breast cutlets
2 tbsp olive oil
2 tbsp butter
1 lb penne pasta
2 c. broccoli florets
2–3 tbsp Cajun Seasoning – adjust to your taste preference
3 cloves garlic, minced
2 c. heavy cream
½ c. dry white wine such as Chardonnay
8 oz. Parmesan cheese, shredded, plus more for garnish
salt and freshly ground black pepper
How to make Cajun Chicken And Broccoli Alfredo
Step 1: Prepare the oven. Preheat it to 200 degrees F.
Step 2: Bring 4-quart water with 1 tbsp salt to a boil in a large pot. Once boiling, add the pasta and cook for about 9 minutes until al dente. Drain when done and keep the pasta water, cooking water in the pot.
Step 3: Let the pasta cooking water boil, then add the broccoli. Blanch the broccoli for about 1 to 2 minutes until just tender and bright green. Into a bowl of ice water, quickly plunge the drained broccoli.
Step 4: Generously season all sides of the chicken with Cajun seasoning.
Step 5: Heat oil in a large skillet. Once shimmering, add the chicken to the skillet in a single layer and cook for about 5 minutes per side, flipping once, until the internal temperature of the chicken reaches 165 degrees F.
Step 6: Using foil, tent a clean baking sheet or oven-safe plate and put it in the oven to keep warm.
Step 7: Transfer the chicken to the baking sheet in the oven.
Step 8: Place the skillet back on the stove and add the butter. Let the butter melt over medium-high heat until foaming. Add the garlic, stir, and cook for about 30 seconds until aromatic.
Step 9: Pour in the wine and deglaze the pan. Let the sauce simmer for about 2 minutes until the sauce has reduced by half. Then, stir in the cream and simmer for another 2 minutes until a little thickened. Next, fold in the Parmesan cheese. To taste, season with salt and pepper.
Step 10: Into the skillet, return the pasta, and toss to coat.
Step 11: Pile the broccoli on top of the pasta in a skillet or a large, warmed serving bowl. Then, add the chicken on top and garnish with extra Parmesan cheese.
Step 12: Serve and enjoy!
NOTES:
Amazing substitute to penne are fettuccini, fusilli, farfalle, cavatappi, or rigatoni. Simply follow the cooking directions on the package.
If using chicken breasts, completely slice them in half to have an even thickness. Through the chicken, cut horizontally using a sharp knife to make sure the pieces will have the same thickness.
In an airtight container, keep any leftovers and store them in the fridge for up to 4 days.
Double the sauce ingredients if you prefer extra saucy Alfredo or if the pasta begins to dry.
