This easy broccoli cheese soup is made with just five simple ingredients. Rich, creamy, and incredibly delicious! INGREDIENTS
4 cloves Garlic (minced)
3 ½ c. Chicken broth, reduced sodium (or vegetable broth, or bone broth)
4 c. Broccoli (cut into florets)
3 c. Cheddar cheese (pre-shredded)
1 c. Heavy cream
HOW TO MAKE EASY BROCCOLI CHEESE SOUP
Step 1: Saute the garlic in a Dutch oven or large pot over medium heat for about 1 minute or until aromatic. As needed, you can add a bit of oil.
Step 2: Pour in the chicken broth and add the heavy cream and chopped broccoli. Then, increase the heat and bring everything to a boil. Once boiling, decrease the heat and let the mixture simmer for about 10 to 20 minutes or until the broccoli has softened.
OPTION 1 (ORIGINAL RECIPE):
Slowly add in the shredded cheddar cheese (first half c. or 64 grams) while stirring continuously until melted. Let everything simmer and whisk until the cheese is completely melted. Next, add half a c. (64 grams) of cheese at a time until all the cheese is added. Ensure to keep it at a very low simmer to prevent seizing. Once all the cheese melts, quickly take the pan off the heat.
OPTION 2 (RECOMMENDED):
Take about ⅓ of the broccoli out of the pan and set aside (optional). Then, puree the rest of the broccoli using an immersion blender. Adjust the heat to low. Next, add the shredded cheese about half c. at a time, stirring often. Continue stirring until the cheese is melted and blended. Puree until smooth. Take off the heat when done and return the broccoli florets to the soup.
