These heavenly treats are superb! Give it a try and feel free to add more ingredients if you wish. Enjoy!
Ingredients:
1 pkg of pre-made pie crust (2 rolls)
1 lb of lean ground beef – I use 90% lean, however, 80% or less will work – just drain off the excess fat before continuing.
¼ c diced onions
½ medium diced bell pepper, any colour
1 tsp cumin
1 tsp minced garlic
¼ tsp salt
¼ tsp pepper
1 tsp chilli powder
1 c Mexican blended cheese
1 Egg
Directions:
Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Step 2: Line with a baking sheet and apply cooking oil to a cookie sheet.
Step 3: Place a large skillet on the stove and turn the heat to medium.
Step 4: Add the ground beef, bell pepper, and onions. Cook for a few minutes until the meat is brown and the veggies are soft.
Step 5: Discard any excess grease from the skillet.
Step 6: Add the garlic, cumin, chilli powder, salt, and pepper. Stir and cook for about 2 minutes.
Step 7: Remove the skillet from the heat.
Step 8: Roll the crusts and use a bowl to make circles over them.
Step 9: Fill each circle with 3 tablespoons of the meat mixture and add 1 tablespoon of cheese over it.
Step 10: Fold and seal the sides using a fork.
Step 11: Repeat this process with the rest of the ingredients.
Step 12: Place the empanadas onto the prepared cookie sheet.
Step 13: In a small mixing bowl, add 1 egg and beat until creamy.
Step 14: Brush each empanada with the egg wash.
Step 15: Place the empanadas inside the preheated oven and bake for 15 minutes or until golden brown.
Step 16: Remove from the oven.
Step 17: Serve hot and enjoy!
Note:
These Empanadas are best served with salsa, guacamole, salad.
