This casserole is one of my family’s favorite dinner rotations. Super easy and quick to make. This casserole is also an excellent make-ahead week’s lunch. This delicious casserole is made with peppers, onions, chicken breasts, and noodles. Incredibly cheesy and scrumptious just like a Fajita!
For this recipe, I cook the chicken on the stovetop. I also use my favorite noodles and cook them less than al dente. Saute the veggies and toss everything together. The final step is to bake the casserole until done. This recipe is super easy to make! Very straightforward and a no-fuss!
Ingredients
2 tablespoons olive oil
1¼ lbs boneless chicken breast or tenders
1 (1 ounce) package of fajita seasoning
½ large onion, chopped
2 bell peppers, chopped (red, yellow, green)
2 (10.75-ounce) cans cream of chicken soup
1 (16-ounce) container of sour cream
2 c. shredded Mexican cheese blend, divided
1 (12-ounce) package of egg noodles
HOW TO MAKE CHICKEN FAJITA NOODLE CASSEROLE
Step 1: Prepare the oven. Preheat it to 350 degrees F. Using cooking spray, lightly grease a 9x 13-inch pan.
Step 2: Following the package directions, cook the noodles. Drain when done and set the cooked noodles aside.
Step 3: Into small bite-sized pieces, slice the chicken. Toss the chicken pieces with the fajita seasoning and set aside.
Step 4: Heat the olive oil in a large skillet over medium-high heat. Once the oil is hot, add the peppers and onions. Saute for about 3 to 5 minutes. Then, add the fajita-coated chicken and continue to cook for another 5 minutes.
Step 5: Place the chicken soup, sour cream, and 1-½ cups of cheese in a large bowl. Mix well, then add in the cooked chicken and vegetables. Stir well.
Step 6: Into the bowl, add the cooked noodles, and toss well. Transfer everything to the prepared pan and top with the rest of the cheese.
Step 7: Place in the preheated oven and bake for about 25 to 30 minutes or until the casserole is bubbly.
