This Creamy Chicken Gnocchi Soup is a very comforting dish made with tender veggies, pillowy gnocchi, and a velvety broth. This is an easy recipe you can easily make in your slow cooker or crockpot.
Ingredients
4 cloves garlic, minced
1 small onion chopped
1 pound boneless, skinless chicken breasts
3-4 medium carrots, peeled and chopped
1-2 stalks of celery, chopped
2 tsp dried basil
2 tsp Italian seasoning
4 c. chicken broth
3 c. fresh baby spinach
2 tbsp cornstarch
2 tbsp cold water
4 slices cooked bacon optional, to serve
2 12-oz. cans of evaporated milk
1 lb potato gnocchi the shelf-stable kind, mini if you can find them
1 tsp salt
10-12 cranks of freshly ground black pepper
How to make Creamy Crockpot Chicken Gnocchi Soup
Step 1: In a large crockpot or slow cooker, place the raw chicken, chopped onion, carrots, celery, minced garlic, basil, Italian seasoning, salt, and pepper. Add the chicken stock or broth. Set to cook for 6 to 8 hours on low or 4 to 5 hours on high.
Step 2: Shred the chicken right into the pot. Or transfer on a cutting board, then shred and return into the pot.
Step 3: Place the cornstarch and cold water in a small bowl or liquid measuring cup. Mix well until you have a thick slurry. Stir this into the pot along with the cans of evaporated milk and gnocchi. Replace the lid and set it to cook for 20 to 30 minutes. At this point, the soup should be a bit thickened and the gnocchi is tender.
Step 4: Stir in the spinach just before serving and allow it to wilt for about 2 to 3 minutes. As desired, season with more salt and pepper.
Step 5: Serve the chicken gnocchi soup with crumbled bacon and/or fresh herbs on top. Enjoy!
Notes:
When making the cornstarch slurry, make sure to use cold water.
Try increasing the amount of cornstarch and water to 3 tablespoons each if you want a thicker soup. And cook the soup longer after adding the milk and gnocchi, covered or uncovered.
Just add water or extra broth, about ¼ cup at a time to thin out the soup, making sure to stir well.
